Liefman is a Belgian brewery founded in 1679 by Jacobus Liefmans settling in Oudenaarde. The historic building, situated close to the river Schelde and more than 300 years old now, is the place where Jacobus's original brewing installations are now preserved as part of the brewing museum and also serving as event location. Since 2008 Liefmans has been part of Duvel Moortgart. Liefmans is well-known for their Kriek and Fruit Lambis beers, which are characterized by a sweet to bitter taste. Ingredients for these beers are, like in other brewing methods too, water, malt and hop. What makes the brewing method unique is that yeast is not added to the wort. Instead, wild airborne yeast is allowed to inoculate the wort by placing the wort outdoors for a defined period of time. This method of non-controlled fermentation used to be the standard procedure before microbiologic processes werde discovered. Nowadays, Lambic is one of the very few exceptions in brewing beer for which this method is being used.
